Peru CENFROCAFE --- FAIR TRADE, ORGANIC
This coffee is sourced from falmily owned farms organized around the Central Fronteriza del Norte de Cafetaleros (CENFROCAFE), which is an umbrella cooperative established in 1999 that suports 80 organizations and 2,00 coffee producers in the region of Cajamarca, Peru. CENFROCAFE provides training and financing aimed at improving coffee quality and yeilds to increase farmers earnings.
Well balanced with good acidity and nice body, hint of white grape and caramel notes.
This coffee is sourced from family owned farms organized around the Chelelektu mill located in the Kochere woreda of the Gedeo zone of Ethiopia. The Gedeo zone is named after the Gedeo people who are indigenous to this area. The Kochere micro-region has long been known as one of the best origins for southern Ethiopian coffee. The combination of very high altitude and iron-rich, acidic soil creates the ideal growing situation to produce the bright, floral Yirgacheffe profile.
This is dry-processed Yirgacheffe and tends to have raspberry notes. This has a very nice crisp aroma with chocolate notes balanced by a cherry jam richness that leads into a dry, lightly flavor-satuarated finish. I roast this a bit darker then some to bring out the malt flavor and tone down the berry slightly.
I recommend you try this coffee black.
I also use this as for my espresso.
RWANDA BOURBON KIVU LAKE
Rwanda Kivu Lake Bourbon is sourced from family-owned farms organized around the INGOBOKA Cooperative located near the shores of Kivu Lake, one of the African Great Lakes, in the Rutsiro district of Rwanda. INGOBOKA was established in 2004 and currently has 135 members, 47 of whom are women. INGOBOKA maintains a children’s school fund to assist members with education expenses, and a health insurance program to improve access to medical care.
This has hints of chocolate and cocoa, with a subtle cherry and vanilla finish and rounded complexity that makes for a wonderfully approachable espresso or drip coffee.
Indonesia Bali Blue ---- ORGANIC, RAIN FOREST ALLIENCE
This Bali Organic Blue Moon is sourced from family owned farms located in the Kintamani highlands on the island province of Bali, Indonesia. Coffee is grown in the volcanic soils of Mount Agung along with citrus trees that provide shade and another source of income. Coffee production is typically organized around a Subak Abian, which refers to the ecologically sustainable irrigation systems developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity), a philosophy focused on the harmonization between the environment, humans and God.
Roasting to a Full City to Full City+, notes of orange peel and cedar smoke arise with a chocolaty finish. Its low acid and smooth, with a heavy supple body. The beans themselves are large this is common in Indonesia coffee.
